Looking for a healthy dessert? Try the healthy brownie!

Although I’m not much of a dessert person, I cannot resist a piece of chocolate. Almost every night I look at my husband and ask him with puppy dog eyes if he can bring me some chocolate with my cup of tea. Pure chocolate, by the way, as that feels a bit healthier at least. But even healthier and more fun to eat (because you make this on your own) is a piece of brownie. A healthy brownie. And yes, that definitely exists.

Ingredients
225 gr dates
120 gr pistachios
9 tbs. cacao powder
60 ml coconut oil
splash of coconut milk kokosmelk
125 ml agave syrup
320 gr cooked chickpeas (weight after drainage)
4 eggs
½ tsp. baking powder
1 tsp cinnamon

Method:
After you pitted the dates, leave them to soak in warm water for an hour. Keep the water: use 60 ml to mix with the dates, in order to create a smooth sauce. In the meantime, heat the oven to 180 degrees.

Mix the date sauce with the cacao powder, coconut oil, coconut milk and agave syrup. Add the chickpeas and eggs and mix the whole until it is smooth. Eventually add baking powder, cinnamon and 80% of the nuts. Mix the whole briefly in the blender, so that the nuts remain nice and coarse!

Time to put a tin and baking paper on the kitchen bench. Cover the tin with paper and spread the sauce over it. Sprinkle the remaining 20% of the nuts on top of the sauce and cook the brownie for 45 minutes.

It’s going to be delicious!
